    This is a funky, fruity coffee that lingers on the palate long after the cup is empty.


    La Cumparsita undergoes a Carbonic Maceration process, which begins with the whole coffee fruit, after 60 hours it is bottled through maceration in bioreactors. These are barrels where the juice or sugar concentration is filtered, this is done three times. The fermentation process lasts about 120 hours, after which the coffee is removed and transferred to drying beds for six days, allowing for sun drying. La Cumparsita does not use mechanical drying, only sun drying ☀️
